Preheat oven to 400°

5 Cubanelle peppers (mild to medium hot peppers), seeded and cut into 1-inch-thick strips
2 large red onions, cut into 6 wedges each
2 garlic cloves, finely chopped
1 1/2 teaspoon fresh oregano, chopped or 3/4 teaspoon dried
2 tablespoons extra virgin olive oil
1 pound turkey or pork sausage, cut on the diagonal into 2-inch pieces.

Gently toss peppers, garlic, oregano, oil and sausages in a large bowl. Transfer to an 11 x 17 inch rimmed baking sheet.
Bake, gently tossing about halfway through, until sausages are cooked thoroughly and the vegetables are tender, about 50 to 55 minutes.
