Preheat oven to 375º
Put 10″ cast iron skillet in oven as it preheats.

1/2 cup  oatmeal
1 egg
1/2 cup milk
3/4 cup flour
1 tbs oil
1 tsp baking powder
1/4 tsp salt
1/2 cup blueberries (fresh or frozen)
1/2 cup walnuts, chopped

Mix all ingredients. Pour batter into lightly greased preheated pan. Bake for 25 minutes. Place inverted dinner plate over pan and turn pan over so cake falls onto plate. serve with pancake syrup.
