8 ounces Brie cheese, rind removed
1/4 cup sun-dried tomatoes in oil, coarsely chopped
2 Tomatoes, seeded and chopped
1/3 cup Kalamata olives, pitted and chopped
2 cloves garlic, minced
1 cup fresh basil, chopped
1/2 teaspoon black pepper, freshly ground
1/4 cup extra virgin olive oil
8 ounces Linguine
1 pound shrimp, peeled
1 cup Parmesan cheese, freshly grated
Cube Brie and combine with the next 7 ingredients in a bowl. Cover and let stand about one hour.
Cook pasta in boiling salted water according to directions.
Two minutes before pasta is al dente (chewy), add the shrimp. Cook two minutes or until shrimp are done.
Drain pasta and shrimp and toss with Brie mixture. Serve with fresh grated Parmesan cheese.
