Preheat oven to 450º 

4 potatoes Yukon gold, Russet or Idaho sliced into 1/4″ square strips
1 tablespoon oil
Salt & pepper to taste
Toss potatoes with oil salt and pepper, spread on a baking sheet, place in middle rack of oven, bake 25 minutes, turning once.

1 pound fish fillets (cod or grouper is best) cut into 1 inch strips
1 1/2 cups crushed Corn Flakes
1 tablespoon oil
2 eggs, beaten plus 2 tablespoons water
1/4 cup flour
1/4 teaspoon cayenne pepper
Salt & pepper to taste
Season fish with cayenne, salt and pepper. Coat fish with flour, shake off excess. 
Dip floured fish into beaten eggs and water.
Dredge in corn flakes, patting in crumbs to thoroughly cover fish.

Arrange fish in single layer on baking sheet. Bake on rack closet to broiler, about 6 to 8 minutes, until done, turning once midway through. (optional: Broil an additional 2 minutes for extra crunch until crumbs are golden brown)
