Heat oil to 375º
1 cup flour
1 cup water
3/4 teaspoons salt
3/4 teaspoon baking soda
1 1/2 teaspoons vinegar
1 pound fish at room temperature. Grouper or cod are best.
Mix all ingredients in a medium bowl
Dip fish or vegetables in batter and deep fry in small batches for 2-3 minutes on each side or until golden. Drain on a rack or paper towels.
