chicken-dumplings

3 tablespoons olive oil
3/4 cup chopped onion
1 1/4 cups chopped carrots
3/4 cup chopped celery
3 tablespoons flour
3 cups chicken broth
2 1/2 cups cooked chicken
1 1/4 cup frozen peas
1/2 teaspoon salt
1/2 teaspoon pepper

Sauté onion, carrots and celery in oil till tender.  Add flour and chicken broth, stir until thickened.
Add chicken, peas, salt, and pepper.  Cook over medium heat until thickened–about 3 minutes.
Pour into baking dish. Top with dumplings.

Dumplings
1 cup flour
2 teaspoons baking powder
1/4 teaspoon salt
1 egg
1/2 cup milk

Whisk flour, baking powder and salt in a bowl. Add egg and milk and mix until just combined. Drop dough over the chicken mixture with spoon and cook till brown about 15 minutes.
