| Grate 1 Cup Parmesan cheese | Chop 1C. Basil | Chop 1/4 Cup Kalamata Olives |

| Mince 2 cloves garlic | Seed 2 tomatoes by squeezing | Tomatoes seeded and chopped |

| Peel 1 pound medium shrimp | Cook 8oz Linguini | Shrimp Linguini and Brie |

| 8 | Oz | Brie Cheese, rind removed, if desired | |
| 1/4 | Cup | Sun-dried tomatoes in oil, coarsely chopped | |
| 2 | Tomatoes, seeded and chopped | ||
| 1/3 | Cup | Kalamata olives, pitted and chopped | |
| 2 | Cloves | Garlic, minced | |
| 1 | Cup | Basil, chopped | |
| 1/2 | Tsp | Black pepper, freshly ground | |
| 1/4 | Cup | Olive oil, extra virgin | |
| 8 | Oz | Linguine, uncooked | |
| 1 | Lb | Shrimp | |
| 1 | Cup | Parmesan cheese, freshly grated | |

Cube Brie and combine with the next 7 ingredients in a bowl. Cover and let stand about one hour. |

|
Cook pasta in boiling salted water according to directions. |
|||
|
Two minutes before pasta is al dente (chewy), add the shrimp. |
|||
|
Cook two minutes or until shrimp are done. |
|||
|
|
|||
|
Drain pasta and shrimp and toss with Brie mixture |
|||
|
Serve with fresh grated Parmesan |
|||
|
Serves 4 to 6 people |
