Shrimp Linguini and Brie

Ingredients Remove rind from 8 oz. Brie Cube Brie
Grate 1 Cup Parmesan cheese Chop 1C. Basil Chop 1/4 Cup Kalamata Olives
Mince 2 cloves garlic Seed 2 tomatoes by squeezing Tomatoes seeded and chopped
Peel 1 pound medium shrimp Cook 8oz Linguini Shrimp Linguini and Brie
 

 

 
Ingredients
  8 Oz Brie Cheese, rind removed, if desired
  1/4 Cup Sun-dried tomatoes in oil, coarsely chopped
  2   Tomatoes, seeded and chopped
  1/3 Cup Kalamata olives, pitted and chopped
  2 Cloves Garlic, minced
  1 Cup Basil, chopped
  1/2 Tsp Black pepper, freshly ground
  1/4 Cup Olive oil, extra virgin
  8 Oz Linguine, uncooked
  1 Lb Shrimp
  1 Cup Parmesan cheese, freshly grated
 

 

 

Cube Brie and combine with the next 7 ingredients in a bowl. Cover and let stand about one hour.

 

Cook pasta in boiling salted water according to directions.

 

Two minutes before pasta is al dente (chewy), add the shrimp.

 

Cook two minutes or until shrimp are done.

 

 

 

Drain pasta and shrimp and toss with Brie mixture

 

Serve with fresh grated Parmesan

   
 

Serves 4 to 6 people
