Salmon Loaf

Ingredients Before Baking After Baking

Ingredients
  1 can (14.75oz) Salmon, drained and flaked
  1 1/2 cups Saltine crackers, crushed (one tube)
  1 Egg, slightly beaten
  1/2 cup Green bell pepper, diced
  1/2 cup Onion, diced
  1/4 cup Milk
  1/2 tsp Worcestershire sauce
  1 dash Hot pepper sauce (optional)
    Black pepper to taste

Preheat oven to 350˚ F

In a large bowl, add everything, mix well and spread into 9x9-inch baking dish or loaf pan

Bake until the top is golden brown, about 45 minutes.

I always double the recipe and make two loaves. Measurements needn't be exact, plus you may add shredded carrot, garlic, even canned corn, etc. If you do, expect slightly longer bake time.

Drizzle with lemon juice before serving.

Serves 3-4 and cost about $3.50
