Crispy Oven Fish & Chips

  Preheat oven 450º
Chips  
4 Potatoes  
1 Tbs Oil  
Salt Cut 4 potatoes (Yukon Gold or Idaho) into 1/4 inch square strips
Pepper Toss with oil, salt and pepper
  Spread in single layer on baking sheet
Bake 25 min Bake in middle rack until brown and crisp, turning once, about 25 minutes
   
Fish  
1 lb Fish fillets, cut into 5 x 1 inch strips
1 1/2 Cups Corn Flakes, crushed
1 Tbs Oil
2 Eggs Beaten with 2 Tbs water
1/4 Cup Flour
1/4 Tsp Cayenne
Salt  
Pepper  
   
Dish 1 Flour
Dish 2 Egg dip
Dish 3 Combine corn flakes with oil in shallow dish
   
  Season fish with cayenne, salt and pepper
  Coat fish with flour, shake off excess
  Dip into beaten eggs and water
  Dredge in corn flake mixture, patting on crumbs to thoroughly cover
  Arrange fish in single layer on baking sheet
Bake 6 min Bake on rack closet to broiler, about 6 to 8 minutes, until done, turning once midway through
Broil 2 min Broil an additional 2 minutes for extra crunch until crumbs are golden brown
