Fried Oysters

| Place the drained oysters in the egg wash | Mix the breading of 1/2 flour with the 1/2 Corn meal | Add Oysters to the breading one at a time and drop into 360° oil. Use a candy thermometer to insure that oil is kept hot. |

Deep fry the oysters, several at a time, until golden. Fry about one minute on each side. Do not over cook and do not put too many oysters in the oil because it will reduce the heat and the oysters will become greasy. Drain on paper towels and serve with tartar sauce. |
