Carrot Cake

Batter
2 cups            Flour, sifted
2 cups            Sugar
2 teaspoon      Cinnamon
2 teaspoon      Baking soda
1 1/2 cups       Oil
4                   Eggs
1 lb.               Carrots, finely grated
                     or 3 small Carrot strained baby food jars
 
Bake
I usually use a bundt pan, but you can use a 9" square as well.

Bake in preheated 350° oven for 30 minutes. Let cool.

 
Frosting
6 oz               Cream cheese
1 tablespoon    Butter
1 box              Powdered sugar
2 teaspoon      Vanilla
