Black Beans

Black Beans, dried
Medium Onion, chopped Green Pepper Cloves Garlic, chopped Oregano Ground Cumin Cider Vinegar Salt Ground Black Pepper Jalapeño pepper Pork chops, or other pork |
Place beans in 4 cups of water and boil for 5 minutes and let stand, covered, for one hour. (Or cover beans in water and let stand overnight.)
Heat skillet over medium heat. Add onions, green pepper and garlic and cook until tender about 5 minutes.
Stir mixture into beans (do not drain soaking water) and
add remaining ingredients including whole pork chops. Bring to a boil, reduce
heat, cover and simmer until beans arte tender about 1-1 ½ hours.
Served over white rice.
