Ingredients | ||
| 1 | Pound | Navy Beans (white pea beans) | |
| 1 | Tsp | Baking soda | |
| 1 or 2 | Onions, peeled, whole | ||
| 1 1/2 | Pound | Polish sausage or pork meat | |
| Mix these 5 ingredients in a small bowl and set aside. | 1/4 | Cup | Molasses |
| 2 | Tsp | Salt | |
| 1 | Tsp | Black pepper, ground | |
| 2 | Tbs | Brown sugar | |
| 2 | Tsp | Dry Mustard |
| Soak 1 pound of beans in 2 quarts of water overnight |
| Preheat the oven to 300° |
| Parboil beans for 10 minutes with 1tsp of baking soda |
| Use a large casserole with a tight fitting lid for the final cooking. |
| Boil some water that you will use to cover the beans when you put them in the oven, about one quart. This will shorten the cooking time because the oven won't have to waste time heating the water. |
| Add the meat, whole onion, beans and cover with the molasses
mixture. Do not stir. Barely cover with the boiling water (The beans should be almost dry when cooked). Cover with the lid. |
| Cook for 3 hours. Cook until they are just tender and not falling apart. |
| Serves about 5-6 people. |
