Baked Beans
(Boston Style)
 

Soak Beans Add pork & onion Molasses mixture Add mixture Cover with water Finished Pork & Beans

Soak 1 lb small white beans (navy beans, etc) in 2 quarts of water over night

Parboil beans for 10 min with 1 tsp of baking soda 

Rinse beans in colander with cold water and drain

In a ceramic bean pot or tight fitting casserole

Add:
1-3 pounds meat (the more fat the better) or sausage
1 large whole onion
beans
1/2 cup molasses
2 tsp dry mustard
2 tsp salt
1 tsp pepper.
Add enough boiling water to just cover beans, don't add to much.
Add water as necessary to keep beans moist. Cooked beans should be almost dry.

Bake at 300
° for 3 hrs 
Makes 5 full portions
